I loved this dish because\, although I never understood why\, she would always cook them when she was in a good mood. This recipe brings me very special memories from my childhood because my mother was a very hard working person who found the time to make this delicious dish. \nOne day\, I told my wife about my mother’s recipe\, she did not believe that plantains could taste so delicious and called me a liar. So I made the dish for her to prove how amazing it is. After taking her first bite she was absolutely blown away by how flavorful it was and wanted to learn the recipe right away. For the first two years after learning how\, my wife would make them on a regular basis. Now she makes them when she is in a good mood just like my mother used to.
