RECIPE:
Scaled Recipe (Yields ~4 Cups)
Ingredients:

  • Sour Cream: 1 ½ cups
  • Cream Cheese: 1 small bar (8 oz), softened
  • Yellow Onions: 1 ½ to 2 medium onions, sliced and caramelized
  • Fresh Chives: 3 oz (about ½ cup finely chopped)
  • Fresh Rosemary: ½ oz (approx. 1 tbsp minced)
  • Roasted Jalapeños: 1 ½ to 2 peppers, seeded and diced
  • Roasted Garlic: 2–3 large cloves, mashed
  • Dry Seasonings: Start with ½ tsp of each (salt, pepper, paprika, onion/garlic powder) and a pinch of chili flakes. Adjust to your preference.

Guide For Preparation

  • Onions: Use 2 medium onions; caramelized with olive oil
  • Dairy Ratio: Keep it roughly 1 part Cream Cheese to 1.5 parts Sour Cream for a scoopable dip.
  • Herbs: Chives are forgiving but be careful with the rosemary—it can easily overpower a smaller batch.

The Cooling Phase:

  • Spread your caramelized onions, roasted jalapeños, and roasted garlic on a chilled plate or small sheet tray.
  • Place them in the fridge for 15–20 minutes.

Last Step Folding & Seasoning:

  • Add your cooled onions, jalapeños, garlic, chives, and rosemary on top of the dairy.
  • Using a rubber spatula, cut through the center of the bowl, scoop across the bottom, and fold the dairy over the aromatics.
